My mission is to develop a full line of great tasting Gluten Free products which carry the Senza Glutine brand.

After spending 27 years working with one of the top pizza chains in the world, a friend who suffers, from Celiac disease suggested to me, that I investigate the gluten free industry. My initial thought was ‘No, this is a trend. It will not last’. A year later, to the day, that same friend insisted I at least take a look. I began doing some research regarding Celiac Disease, gluten sensitivity, the limited dining options and the growing demand for gluten free products.

I soon discovered that 1 in every 133 Americans have Celiac Disease. 97% of Americans estimated to have Celiac Disease are not diagnosed. In addition there are 18 million people who suffer from gluten allergies. The number of people who simply choose a gluten free diet grows daily.

What Is Gluten?

Gluten is the protein portion of wheat, barley, and rye.

There are 3 types of people who either must or choose to be gluten free:

*3 million Americans suffer from Celiac Disease, and must maintain a strict Gluten Free diet. *Millions more are allergic to wheat and have found general health benefits by eliminating Gluten from their diets.
*Millions more, who neither suffer from Celiac Disease, nor are allergic to wheat, choose to eat Gluten Free as a more healthier alternative

Who Needs Gluten Free?

Total sales of Gluten Free products have grown at an average rate of 28% since 2004, and are expected to reach 2.6 billion by the end of 2012, up from 580 million.

WHY LEAVE MONEY ON THE TABLE?

Serve Gluten Free Pizza and pasta to your customers who need it. They in turn will bring the customers who do not need it. Adding gluten free menu items will increase your average ticket.
